1 1/2 lb ground turkey
1 small yellow onion, chopped
1/2 cup bread crumbs
1 egg beaten
1 cup grated parmesan
2 tbsp Dijon mustard
1 jar roasted red peppers in 1/2" pieces, 7oz
3/4 tsp kosher salt
1/2 tsp pepper
Combine all ingredients in a large mixing bowl. Shape into 8" loaf in a 7x11" baking dish.
Bake at 400 for 45 minutes. Let rest 15 minutes before serving.
